The Legendary Wagyu

The Katsube Beef, raised at Katsube Livestock Farm in Okuizumo, Shimane Prefecture, is considered a legendary Wagyu as only about 50 heads are shipped each year, making it rare in the market. Its quality is distinguished by a high content of oleic acid, a component of olive oil, resulting in a light and delicate fat that enhances the meat’s flavor and tenderness. This is a type of beef unlike anything you have ever tasted before.

Sommelier On-Site

We carefully combine a variety of Japanese and Western tableware to beautifully enhance the presentation of each dish. The cutlery, which changes depending on the ingredients, is an essential element in creating a dining experience that delights all five senses.

The Origin of Kogentey

The Kogentey name is rooted in the history of a grand estate in Tsurumaki, Setagaya, which was said to have been built in the early Showa period. The estate, with its vast 1,400-tsubo

(4,620 square meters) grounds, remained sealed behind large gates for many years. Stepping into the estate felt like entering another world, with its mysterious garden resembling a “phantom garden.” At the center of this garden stood a large stone statue of a tiger, silently guarding the estate. In 2008, when we opened our flagship restaurant on this land, the founder named it “Kogentey” to honour the mystical garden and its guardian tiger.
